I have purchased a “yellow” racing pigeon cock and wish to produce more similar to this colour. What colour hen would I need to pair him to in order to produce more of this colour? Thanks

From the photo that you sent (and you're welcome to post here) a dark red or blue check. Red is best but blue is doable.
You'll get yellow daughters in the first generation, and can pair the father to the daughters to produce more yellow cockbirds.

You need a cockbird who carries dilute, so another yellow or silver (dilute blue) would be perfect. If you don't have that, then pair her to any cock (preferably a red but blue works too) and then pair her son back to her. Or her father.
