What can you give them to add weight? I have a hen who broke a wing and has been wasting away

First I'd be ensuring she's actually getting food (not outcompeted by stronger birds), and that she isn't infected with parasites (worms, cocci, canker).

I have isolated and wormed her

I'd be surprised if you don't see worms in the droppings. I'd also treat for coccidiosis, the treatment is safe and cocci are quite damaging to sick pigeons.
